Birds & Beans Nicaragua Woodthrush Coffee
- This strictly hard bean coffee is grown at elevations over 4500 feet in the province of Madriz in Northern Nicaragua. This area of Nicaragua is of particular importance to our scientific advisor, Dr. Bridget Stutchbury. She has been tracking individual wood thrushes from her woods in Pennsylvania through their migration to Central America with an ingenious tracking device of her invention. Recently she established that almost 50% of Wood Thrushes return to Nicaragua and Honduras each year. She loves the beautiful, haunting song of the wood thrush and tells us that the most important thing we can do to preserve our populations of them here in Canada is to drink certified Bird Friendly® coffee. We named this coffee in honour of her good advice. This coffee is bold yet balanced in its complexity. We noticed earthy fruit on the wet grounds that comes out as dark chocolate in the cup. We found deep fruit, perhaps plum or rasin, a dryness of citris rind, and a hint nutmeg. As the cup cools a dark honey aroma grows. It has a long aftertaste of bitter chocolate balanced by sweetness on the tongue.
